After many years of hosting parties, I've also learned that it helps avoid congestion if you can place foods in several different locations. If it's an afternoon party and people will also be outside, I like to put a table up out on the patio as well.

Here are a couple of quick and easy recipes that always make a hit: 1. Combine one can of chili without beans and 8 oz of cream cheese in a saucepan. Heat on med-low heat until the cheese melts, stirring often. Serve

hot with tortilla chips. (This can be doubled and served in a hollowed out round loaf of bread.) 2. Spread softened cream cheese on rectangular slices of deli ham. Sprinkle with diced green chiles or diced jalapeno peppers or choppped olives and pimentos. Roll up tightly, wrap in plastic wrap, and slice into bite size rolls just before serving. (These can be made ahead and frozen.) You can also do this with flour tortillas instead of ham. 3. Put two 8 oz. blocks of cream cheese (jeez...you must think I work for the

Philadelphia cream cheese company!) together side by side on a serving plate and carve a large heart. Pour some good salsa on top and serve with Wheat Thins. (This is also good with jalapeno jelly instead of the salsa.) 4. Combine 1 cup of soft lime sherbet with 2 cups of Cool Whip for a dip to go with cut up fruit or fruit kebobs. 5. If you can find strawberries with stems, dipping them in melted white chocolate makes a beautiful and delicious treat.
